Lemon Cookies
1 Box Lemon Cake Mix
1 Small container Cool Whip
1 Egg
Preheat oven to 350 degrees.
Mix all ingredients together, then refrigerate for about 10 minutes. Scoop into small balls then roll in powdered sugar and bake on silicone mat or parchment paper on cookie sheet.
Bake 10-12 minutes. Makes approx. 48 cookies.
Note: I’ve also used Red Velvet cake mix or Chocolate cake mix
Two Ingredient Mini Muffins
1 Box Spice Cake Mix or Carrot Cake Mix
1 15oz. Canned Pumpkin Puree
Preheat oven to 400 degrees.
Have oven rack in the center of the oven.
Mini muffins you can use liners or coat pan with non-stick spray
Mix cake mix and pumpkin puree in large bowl – Mix well, the mixture will be very thick.
Scoop into muffin pan.
Bake 10-12 minutes (insert tooth pick and it should come out clean.
Remove and cool on wire racks.
Note: You can add 3/4 c. pecans chopped or 3/4 c. mini chocolate chips
Makes approx. 24 muffins
